Ingredients:
5-6 zucchinis
1 yellow onion, chopped
oregano powder- alot of sprinkling for good taste
salt and pepper to taste
1 Tbsp. sugar
2 tsp. chicken powder
olive oil for sauteeing
Directions:
Wash zucchini well.
Peel zucchini leaving some green skin on.
Cut the zucchini into 2-3 parts (depending how big the zucchinis are) and set aside.
Fry the chopped onion in some olive oil until a little brown.
Add the zucchinis on top of the onion and water to cover everything.
Add the rest of the ingredients
Cover the pot half-way and let everything boil on high for 20-25 minutes, until zucchinnis are soft.
Transfer to blender in batches, making sure to put enough onion in the water that will be used for blending.
*Note: This recipe works great doubled, tripled, etc. A big hit for babies,kids, and adults!
