1 onion, chopped
2 cloves of garlic, minced
3 lbs of cubed meat (stew). Meat should have as little fat as possible.
1 red pepper, diced (optional)
1 lb bag of black beans, rinse well
1 small can of tomato paste
Handful of shredded carrots
Sprinkle of:
garlic powder
onion powder
paprika
cumin
dried parsley
pepper
1-1/2 Tbs of salt
13 cups of water
Soak beans for 6-8 hours before cooking
Saute onion and garlic together until light brown
Add meat. Continue mixing until brown. Do not burn the onion-garlic mixture or the meat
Take the rinsed and drained beans and add to meat
Mix everything together for about one minute
Add the 13 cups of water with the spices
Add tomato paste, carrots and the pepper
Bring everything to a boil. Once boiled, mix well and let boil with lid half on for 20 minutes
Mix again and cover completely. Simmer for 2 1/2 to 3 hours on low to medium low. Continue mixing while cooking. Water should continue to bubble
Saute onions. Add to brown rice
The beans can be substituted for 1 lb bag of lentils
