3 Tbsp oil
1 diced onion
3 quarts water
1/2 cup pearl barley
1/2 cup diced mushrooms
3 carrots, sliced
3 stalks celery, diced
salt & pepper to taste
Saute onions and barley in oil. When browned, add water and boil for 30 minutes. Add vegetables and spices. Cook for 2 1/2 hours on medium-low flame.
