Chicken Curry
1 tbsp Margrine 2 tbsp peanut oil 4 chiken breast halves (skinned) 1 chopped onion 3 minced garlic cloves 2 tbsp Curry powder 1/2 cup diced apple 1/2 cup chopped dried apricots 1/2 cup raisins chicken broth salt
Melt Margrine with oil in aheavy skillet over med heat. Add Chicken and brown on both sides (5 min). Remove Chiken. Add Onion and Garlic Until translucent (5 min) Stir in curry powder. Slice chiken into chunks and put back in. Add Apple, apricots, and raisins. add enough broth to cover mixture. Season with salt. Cover and simmer for 10 min. Remove chicken and allow fruit mixture to simmer 5 more min. Spoon Fruit over chicken and serv with rice.
