9 Kholrabi, peeled and cubed
7 carrots, sliced (If very big, use 5)
1-1/2 to 2 onions (The bigger the better)
4 garlic cloves, minced
1-1/2 Tbs of salt
A dab of pepper
8 cups of water
Saute onion and garlic in a pot big enough to hold the entire soup
While sauteeing, boil 8 cups of water in another pot
Once the kholrabi and the carrots are peeled and cut up, mix together and throw into onion and garlic mixture once the mixture is brown.
Mix everything for about 1 minute
Add the 8 cups of boiling water to the mixture. Add the salt and pepper.
Once everything starts to boil, simmer for 1-1/2 hour. Put batches of the mixture in the blender.
Once blended, putback into pot and simmer for about 3 minutes.
NOTE : To present beautifully, sprinke with pine nuts or parsley flakes in each individual bowl.
