Olive oil
Fresh or frozen vegetables, including carrots, green beans, peppers,mushrooms, water chestnuts, and bamboo shoots
1 onion
2 garlic cubes, pressed
Lite soy sauce
Chicken breasts
1 tsp of sugar (optional)
Cut chicken cutlets into cubes.
Heat 1 Tbs of oil, Add crushed garlic. Saute for 10 minutes, then add chicken cubes.
When chicken turns white, remove promptly.
In another frying pan, saute onions. Add frozen vegetables, salt and pepper to taste and soy sauce. (Add sugar or splenda- optional)
Vegetables should remain partially crisp.
Combine chicken with veggies. Cook thoroughly and serve over brown rice.
