2-1/4 cup of whole wheat pastry flour
3/4 cup of soy milk
3/4 tsp of baking soda
1/2 tsp of salt
4 oz of earth balance margarine, softened
3 ripe bananas, mashed
1 tsp of vanilla
2 eggs
1/2 cup of walnuts, optional
With an electric mixer, beat all ingredients together
Bake in a 9 x 13 pan at 350 for 35 minutes
