1 cup of wild rice
1 granny smith apple, chopped small
1/2 of a red pepper, cut up
1/2 cup of currants or white raisins
1/2 cup of slivered almonds
1/2 small red onion
dressing:
1-1/2 Tbs of red wine vinegar
2 Tbs of extra virgin olive oil
1/2 tsp of salt
Pepper to taste
This is always a hit and can stay good in the fridge for a few days!
