1 Large onion, diced
4 Cloves of garlic, minced
1 Eggplant, cut into small chunks
1 Pepper (any color), diced
28 oz. Diced tomatoes
6 oz. Tomato paste
1 Bay leaf
1 Tsp of Salt
1 Tsp of Pepper
1 Tsp of Basil
1 Tsp of Oregano
1 Tsp of Parsley
Saute onion and garlic. Add everything else.
Cook on low flame for 1 hour
