1/4 cup of all purpose flour
1/4 tsp of salt
1/4 tsp of black pepper
1-1/2 pound of chicken
1 fried onion
1-1/2 cup of chopped celery
1-1/2 cups of peeled and chopped carrots
1-1/2 cup of peeled and chopped parsnips
1 Tbs of minced fresh garlic
1/2 cup of chopped fresh basil
1 cup of diced tomatoes
1/2 cup of sherry
1/2 cup of tomato paste
1/2 tsp of salt (optional)
In a large bowl, combine flour with salt and pepper. Coat chicken cubes in flour mixture.
Lightly coat a large saucepan with olive oil. Saute onions and chicken over medium heat until golden brown.
Add celery, carrots, parsnips and garlic.
Simmer over low heat for 20-25 minutes.
Add remaining ingredients and cook for 10 minutes
